Brown Mustard (Brassica nigra, strictly the black mustard; the brown mustard of most seed trade is Brassica juncea) is a tall annual of the mustard family, Brassicaceae, native to the Mediterranean and the Middle East and long grown and naturalized across Europe, Asia, and North America. It grows 1 to 2 meters with a branched, bristly stem, lobed lower leaves, and loose racemes of small bright yellow flowers in summer. The slender pods hug the stem and hold tiny, hard, dark reddish-brown to black seeds that are mild when whole but, once crushed and wetted, release a sharp, hot pungency. We extract the dried seed.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
