Cayenne (Capsicum annuum, cayenne group) is a chili pepper, a short-lived perennial grown as an annual, of the nightshade family, Solanaceae, native to Mexico and Central America and carried around the world after 1493; it is named for the Cayenne River of French Guiana. The bushy plant grows 60 to 120 centimeters with glossy, pointed leaves and small white flowers, followed by slender, slightly curved, wrinkled pods 10 to 25 centimeters long that ripen from green to bright red and hang downward. The flesh is thin and the heat sharp, around 30,000 to 50,000 Scoville units, from capsaicin. We extract the dried fruit, the whole pepper.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
