Chive (Allium schoenoprasum) is a clumping perennial of the amaryllis family, Amaryllidaceae, and the only onion native to both the Old and New Worlds, growing wild in meadows and on rocky ground across Europe, Asia, and northern North America. From small, slender bulbs it sends up dense tufts of hollow, tubular, grass-like leaves 20 to 40 centimeters tall and, in early summer, round pompoms of pale purple to pink star-shaped flowers that bees crowd onto. The leaves have a delicate, mild onion flavor and are snipped fresh over potatoes and eggs; dried, they are cut into short rings. We extract the dried chive rings.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
