About Sanguisorba officinalis
Di Yu (Sanguisorba officinalis), the great burnet, is a perennial of the rose family, Rosaceae, native to damp meadows and grassy slopes across Europe, northern Asia, China, Japan, and northwestern North America. It grows 50 to 120 centimeters with pinnate leaves of 7 to 15 oval, sharply toothed leaflets and, on tall, wiry, almost leafless stems in late summer, dense, oblong, dark crimson to maroon flower heads 1 to 3 centimeters long that lack petals and look like small bottle brushes. The root is thick, spindle-shaped, and dark brown outside, reddish within, with a bitter, strongly astringent taste. We extract the dried root.
