Mustard (Sinapis alba), the white or yellow mustard, is an annual of the mustard family, Brassicaceae, native to the Mediterranean and grown as a seed crop in Canada, Europe and the United States. It grows 30-80 cm tall with bristly, lobed leaves and loose spikes of bright yellow four-petaled flowers, followed by short, bristly pods with a flat beak. The round, pale yellow seeds are milder than brown or black mustard, with a sharp heat that develops only when ground and wetted, and are the base of American yellow mustard. We extract the dried seed.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
