Persimmon (Diospyros kaki) is a deciduous tree of the ebony family, Ebenaceae, native to China and long cultivated in Japan, Korea and, more recently, California. It grows to 10 meters or more, with broad, glossy, oval leaves that turn orange and red in autumn, and inconspicuous cream-colored flowers. The large orange fruit ripens after the leaves drop and carries a persistent, four-lobed leathery calyx at its base, which is harvested separately and known in Chinese as shi di. We extract the dried sepals.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
