Szechuan pepper consists of the outer pod of the fruit of an aromatic shrub or small tree native to China, and now found throughout the temperate zones of China, Japan, the Himalayas and North America. It is not technically a pepper at all, but a member of the Rutaceae (rue or citrus) family and closely related to the prickly ash. Szechuan pepper has a similar action on the taste buds; instead of being hot or pungent like black, white, or chili peppers, it creates a unique tingling, numbing pins-and-needles sensation (the scientific name for which is paresthenia, caused by its 3% content of hydroxy-alpha-sanshool) that prepares the palate for hot spices. Appropriately for a member of the citrus family, Szechuan pepper is characterized by its tart, lemony, acrid flavor; it is also woodsy and slightly peppery, with a complex progression of flavors that Tony Hill, in The Contemporary Encyclopedia of Herbs and Spices, describes as moving from “citrus zest to numbing shock to lingering mild sweetness.”*

Tinctures can also be administered directly into the mouth without the assistance of water however some tinctures are unpalatable which is why most people prefer to dilute them into a beverage.

In Chinese it is called huajiao, and it is one of the defining flavors of Sichuan cooking, known for the tingling, numbing sensation (called "ma") it brings to the tongue. The part used here is the dried berry husk - the outer shell of the fruit, not the gritty seed. This is a berry-husk liquid extract, offered in two forms - a traditional alcohol-based tincture and an alcohol-free glycerite - each from carefully sourced raw material. Despite its name, Szechuan pepper is not related to black pepper or to chili peppers; it belongs to a completely different plant family. This is a whole-husk extract that carries the spice's natural spectrum of constituents, not an isolated compound, and we label it clearly by botanical name and plant part.
What is the difference between the tincture and alcohol-free versions?
Both are liquid extracts of the same Zanthoxylum bungeanum berry husk; only the solvent differs. The tincture uses alcohol as the traditional solvent, with vegetable glycerin and water. The alcohol-free version is a glycerite made with vegetable glycerin and purified water, suited to those who avoid alcohol. Both deliver the spice's constituents in a convenient liquid you take by the drop. Is Szechuan pepper the same as black pepper, chili, or prickly ash?
No, and the name causes several mix-ups. First, black pepper: despite sharing the word "pepper," Szechuan pepper (Zanthoxylum bungeanum) is not black or white pepper, which comes from Piper nigrum, an unrelated plant. Second, chili: it is also not a chili or hot pepper (Capsicum); Szechuan pepper does not bring heat but rather a distinctive tingling, numbing sensation. Third, prickly ash: Szechuan pepper belongs to the same genus (Zanthoxylum) as prickly ash and is sometimes called "Chinese prickly ash," so it is a botanical cousin of the medicinal prickly ash bark, but this product is a different species, a different part (the berry husk rather than the bark), and a culinary spice. There are also several related Szechuan peppers, such as Japanese sansho (Zanthoxylum piperitum); ours is Zanthoxylum bungeanum. We label our product clearly by botanical name and plant part so there is no confusion.
