Allspice (Pimenta dioica) is an evergreen tree of the myrtle family, Myrtaceae, native to Jamaica, the Greater Antilles, southern Mexico, and Central America; Jamaica still produces most of the world crop. It grows 10 to 18 meters with smooth, pale, peeling bark, glossy aromatic leaves, and clusters of small white flowers. The fruit is a pea-sized berry picked green and sun-dried to a wrinkled brown ball somewhat larger than a peppercorn. Its scent combines cinnamon, clove, and nutmeg in one spice, hence the English name; it is the signature seasoning of Jamaican jerk and of Caribbean and Middle Eastern cooking. We extract the dried fruit.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
