Beet (Beta vulgaris) is a biennial of the amaranth family, Amaranthaceae, bred from the wild sea beet of Mediterranean and Atlantic shorelines and grown as a vegetable in Europe since Roman times. In its first year it forms a rosette of large, glossy, often red-veined leaves on fleshy stalks above a swollen taproot, deep crimson in the garden beet, white in sugar beet, and slender in chard, which is grown for leaves only. In the second year it bolts to 1 to 2 meters with spikes of tiny greenish flowers. The root tastes sweet and earthy, the flavor of geosmin. We extract the dried leaf and root separately.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
