Cassia (Cinnamomum cassia), the Chinese cinnamon, is an evergreen tree of the laurel family, Lauraceae, native to southern China and northern Vietnam and grown in plantations in Guangxi, Guangdong, and Yunnan. It reaches 10 to 15 meters with grey, rough bark, leathery, oblong leaves marked by three prominent parallel veins, and small yellowish flowers followed by dark purple berries. Its bark is thicker, redder, and hotter in flavor than Ceylon cinnamon and curls into a single thick scroll when dried; it is the cinnamon of most American grocery shelves. In China the young twigs are known as Gui Zhi. We extract the dried bark and twig separately.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
