About Anthriscus cerefolium

Chervil (Anthriscus cerefolium), the garden or French chervil, is a delicate annual of the carrot family, Apiaceae, native to the Caucasus, southeastern Europe, and western Asia and spread through Europe by the Romans as a kitchen herb. It grows 30 to 60 centimeters with slender, hollow, finely grooved stems and soft, lacy, bright green leaves divided like a fern, which turn reddish as the plant ages; small umbels of tiny white flowers appear in early summer, followed by slender, beaked seeds. The leaves have a mild, sweet flavor between parsley and anise that fades with heat, which is why French cooks add it last. We extract the dried leaf.

Tincture or alcohol-free drops?

Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of dried herb per serving is printed on each label.
