Galangal (Alpinia galanga), the greater galangal, is a tall rhizomatous perennial of the ginger family, Zingiberaceae, native to Indonesia and widely grown across Southeast Asia. Leafy shoots reach 2 m with long, blade-like leaves and panicles of greenish-white flowers with a red-veined lip. The pale, ringed rhizome is firmer than ginger and smells of pine and citrus with a sharp peppery taste; it is a basic spice of Thai and Indonesian cooking. We extract the dried root.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
