Lesser Galangal (Alpinia officinarum), known in China as gao liang jiang, is a slender perennial of the ginger family, Zingiberaceae, native to Hainan, Guangdong and Guangxi in southern China and northern Vietnam. It grows 1-1.5 m tall with narrow, lance-shaped leaves and racemes of white flowers streaked with red. The thin, branched rhizome is reddish-brown with pale rings, hard and fibrous when dried, with a pungent, peppery taste and a sharp spicy scent that is hotter and more resinous than its larger cousin. We extract the dried rhizome.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
