Maitake (Grifola frondosa), the hen of the woods, is a wood-decaying polypore fungus of the Meripilaceae family, found at the base of oaks and other hardwoods in the temperate forests of Japan, China, Europe and eastern North America and now grown on sawdust. It forms a large, dense cluster, often 30-60 cm across and sometimes over 20 kg, of many overlapping, fan-shaped, grey-brown caps on branching white stalks, looking like a ruffled hen. The flesh is white and firm with a woodsy, peppery taste. We extract the dried whole fruiting body.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
