Parsley (Petroselinum crispum) is a biennial of the carrot family, Apiaceae, native to the central Mediterranean and grown worldwide as a culinary herb and garnish. In its first year it forms a rosette of bright green, triangular leaves that are either tightly curled or flat, depending on the cultivar, and in the second year sends up a stalk with umbels of tiny yellow-green flowers. The taproot is thick and pale, and in the Hamburg type grown as a root vegetable. We extract the dried leaf and root separately.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
