Summer savory is widely renowned as a culinary herb with a smoother flavor than Winter Savory and similar to marjoram, but unique to itself. Originally introduced to England from the Mediterranean, it quickly took its place along with thyme, marjoram and basil. Indeed, it was one of the herbs that Charlemagne specifically ordered planted in his own royal garden. There are two major types of savory in common cultivation, winter and summer savory. Summer savory is lighter in flavor, but still has the characteristic minty-peppery flavor that is particular to the species. It is often used to flavor spring vegetables, potatoes and cheeses. It is a primary ingredient in the French herbs Provencal. Constituents: 0.3 to 2% of a volatile oil consisting of about 30% carvacrol, 20-30% p-cymene, and lesser amounts of numerous other constituents. The plant also contains 4 to 8.5% of tannin.*

Frequently Asked Questions about Summer Savory Extract
What is Summer Savory (Satureja hortensis) leaf extract?
Summer Savory is a liquid extract of the dried leaf of Satureja hortensis, a Mediterranean culinary herb of the mint family (Lamiaceae) with a minty-peppery flavor. It is one of the classic components of the French seasoning blend herbes de Provence. This tincture is extracted with organic alcohol. It is a whole-leaf liquid extract carrying the herb's natural constituents, including the aromatic compounds carvacrol and thymol (the same family found in thyme and oregano). Please note this is SUMMER savory (Satureja hortensis) - a different plant from WINTER savory (Satureja montana), which we sell separately - and please read the safety notes below.
What is the difference between the tincture and alcohol-free versions?
Both are liquid extracts of the same Satureja hortensis leaf; only the solvent differs. This tincture uses organic alcohol with vegetable glycerin and water, the classic conventional method that yields a super-concentrated extract with a long shelf life. The alcohol-free version is a glycerite made with vegetable glycerin and crystal clear water instead, for those who prefer to avoid alcohol. Choose the tincture for a traditional alcohol-extracted format; choose the glycerite if you prefer no alcohol. The botanical inside is identical. Please follow the safety notes for both.
What is the difference between summer savory and winter savory?
They are closely related but not the same. Summer savory is Satureja hortensis, an annual with a milder, sweeter, more delicate flavor - this is our product. Winter savory is Satureja montana, a hardy perennial with a stronger, more pungent, resinous flavor and a more intense action; we sell it separately. Both are mint-family herbs rich in the aromatic compounds carvacrol and thymol, and both are used in cooking, but they are different species and are not interchangeable in taste or strength. We label ours clearly as summer savory (Satureja hortensis) so it is not confused with winter savory.
How do I use Summer Savory leaf liquid extract?
Shake well before use. The suggested serving for adults is 20 to 30 drops (approximately 1 ml, one full squeeze of the dropper) in 2 oz of water, tea or juice, or as directed by your healthcare practitioner. Because this is an alcohol tincture, adding it to a little water softens the taste. Do not exceed the suggested serving. Please read the safety and allergy information below before use. Store in a cool, dry place away from direct light.
Is Summer Savory right for everyone? Safety information.
Summer savory is a widely used culinary herb and is generally well tolerated at sensible amounts, but a few cautions apply to a concentrated extract. It is a mint-family (Lamiaceae) plant, so avoid it if you are allergic to savory, thyme, oregano or related herbs; contact with the fresh plant can cause skin irritation in sensitive people. Its aromatic compounds (carvacrol and thymol) can be irritating in concentrated form, so keep to the suggested serving and do not exceed it. Do NOT use during pregnancy or while nursing, as its safety in these situations is not established, and do not give it to young children. If you take any medication or have a medical condition, consult a qualified healthcare practitioner before use. Keep out of reach of children. This tincture contains alcohol and should be stored in a cool, dark place. These statements have not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure, or prevent any disease.
