Asafoetida (Ferula Assa-foetida) is the dried gum-resin of a large plant in the carrot family (Apiaceae) native to Central Asia and long associated with India, where the spice is known as hing. The resin is a natural latex tapped from the plant. This alcohol-free extract is prepared from the pure gum-resin, with no wheat or added starch.
