In its first year, the plant forms a large basal rosette of broad, heart-shaped leaves that can reach 70 cm in length. In its second year, it sends up a tall branching stalk reaching 1-2 meters in height and produces clusters of round flower heads covered in stiff, hooked bristles - the characteristic burrs that cling to clothing and animal fur to disperse seeds. These hooked burrs famously inspired Swiss engineer George de Mestral to invent Velcro after observing them under a microscope in 1941. The genus name Arctium derives from the Greek word for bear, referencing the rough, shaggy appearance of the burrs; the species name lappa derives from the Greek for "to seize," describing how the burrs cling to passersby. In Japan and Korea, burdock root is known as gobo and is a staple root vegetable used in traditional cuisine.
