About Carum carvi

Caraway (Carum carvi) is a biennial of the carrot family, Apiaceae, native to meadows and pastures across Europe, North Africa, and western and central Asia, and grown as a spice crop in the Netherlands, Finland, and Canada. It forms a rosette of finely divided, feathery leaves in its first year and in the second sends up a slender, hollow, branching stem 30 to 80 centimeters tall topped with small flat umbels of tiny white or pinkish flowers. The fruits are the familiar curved, ribbed, brown crescents 3 to 6 millimeters long, with a warm, sharp, anise-and-pepper flavor that marks rye bread, sauerkraut, and kummel liqueur. We extract the dried fruit.

Tincture or alcohol-free drops?

Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of dried herb per serving is printed on each label.
