Cinnamon (Cinnamomum verum, formerly Cinnamomum zeylanicum), the true or Ceylon cinnamon, is an evergreen tree of the laurel family, Lauraceae, native to Sri Lanka and the Malabar coast of southwestern India and grown on plantations in Sri Lanka, the Seychelles, and Madagascar. Left alone it grows 10 to 15 meters with leathery, glossy, three-veined leaves that flush red when young and small, yellowish flowers, but in cultivation it is coppiced into a bush of straight shoots. Peelers strip the thin inner bark from these shoots and roll it into tight, layered quills, pale tan, brittle, and sweetly fragrant, far more delicate than cassia. We extract the dried bark.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
