Shiitake (Lentinula edodes) is an edible wood-decaying mushroom of the family Omphalotaceae (formerly placed in Marasmiaceae), native to the forests of East Asia, where it grows on the dead wood of oak, chestnut and shii trees and has been cultivated in China and Japan for roughly a thousand years. The cap is 5 to 15 cm across, tan to dark brown, often cracked or flecked with white scales, with a smooth margin that curls inward when young, cream-colored gills and a fibrous, off-center stem. Dried shiitake have a rich savory aroma. We extract the dried mushroom.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
