Tarragon is an aromatic Eurasian perennial cultivated for its sweet, anise-like flavor. Its Latin name, dracunculus, means “little dragon” and is derived from the medieval belief that the shape of a plant reflected its uses (the Doctrine of Signatures). Because its roots appear serpentine, medieval herbalists regarded tarragon as a treatment for snakebite. Today tarragon is not widely used medicinally, but the fresh leaves and stems are used in cooking, and at least one master chef has declared that scrambled eggs with the right amount of tarragon are a bit of heaven. Tarragon imparts its flavor readily, and is one of the herbs often used in making flavored vinegars and oils. While dried tarragon is sometimes used as a seasoning, the drying loses much of the flavor of the herb. Instead, many herbalists recommend starting a plant from a cutting to keep inside throughout the winter. Tarragon contains phenylpropanoids methyl chavicol (also called estragole), anethol (10%), terpenes trans-b-ocimene (up to 22%), cis-b-ocimene (up to 15%) and y-terpineol, p-methoxy cinnamaldehyde , phellandrene, a- and b-pinene, camphene, limonene and eugenol.*

Frequently Asked Questions about Tarragon Extract
What is Tarragon (Artemisia dracunculus) extract?
Tarragon, botanically Artemisia dracunculus and also called French tarragon or estragon, is an aromatic culinary herb of the daisy family (Asteraceae), long prized in French cooking. The part used here is the dried leaf, sourced from France. The leaf naturally contains estragole (methyl chavicol) along with anethole and other aromatic compounds - these are simply constituents of the raw material; please read the safety note below. We offer the extract in two forms, an alcohol-free glycerite and a traditional alcohol-based tincture, both taken by the drop. This is true French tarragon, Artemisia dracunculus. It is a different plant from Mexican tarragon, which is Tagetes lucida (in the marigold family) and which we sell as a separate product. We label the botanical name (Artemisia dracunculus) and the plant part (leaf) on every page.
What is the difference between the alcohol-free and tincture versions?
Both are liquid extracts of the same Artemisia dracunculus leaf; only the solvent differs. The alcohol-free version is a glycerite made with vegetable glycerin and purified water, suited to those who avoid alcohol. The tincture uses alcohol as the traditional solvent, together with vegetable glycerin and water. Both deliver the leaf's constituents in a convenient liquid you take by the drop. Choose the glycerite if you prefer no alcohol; choose the tincture for a classic alcohol-extracted format with a longer shelf life.
Is this the same as Mexican tarragon or Russian tarragon?
Not exactly. This is true French tarragon, Artemisia dracunculus. Russian tarragon is the same species, Artemisia dracunculus, but a different, milder cultivar, so it is botanically the same plant. Mexican tarragon, however, is a completely different plant - Tagetes lucida, in the marigold family - which shares the "tarragon" name because of a similar aroma; we sell that as a separate product called Mexican Tarragon. This page is French tarragon, the leaf. We print the botanical name and plant part on every page so the exact plant is clear.
How do I use Tarragon liquid extract?
Shake well before use. Adults take 20-30 drops (about 1 ml, one full squeeze of the dropper bulb) in 2 oz of water, tea, or juice, three times daily, or as directed by your practitioner. Drink the entire contents. Do not exceed the suggested serving, and please read the safety note below.
Is Tarragon extract right for everyone? Safety and storage.
Use tarragon extract in moderation and do not exceed the suggested serving. A safety note about tarragon: it naturally contains estragole (methyl chavicol), a compound that regulatory bodies such as the European Medicines Agency regard as potentially genotoxic at high concentrations. A liquid leaf extract like this contains far less estragole than tarragon essential oil, but it is still sensible to use it modestly rather than in large amounts or for long, continuous periods, and to avoid tarragon essential oil. Do not use this product during pregnancy or while nursing, or consult a qualified healthcare practitioner first. If you take any medication or have a medical condition (or are allergic to plants in the daisy family), consult your physician before use. Keep out of the reach of children. This alcohol-free glycerite is best refrigerated after opening. These statements have not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure, or prevent any disease.
