Cao Dou Kou is the Chinese name for the seed of Alpinia katsumadai, an aromatic plant of the ginger family (Zingiberaceae) known in English as Katsumada galangal or grass cardamom; the dried seed is known in pharmacy as Semen Alpiniae Katsumadai. This tincture is an alcohol extract of the dried seed. It began as a culinary spice and is also documented in the Korean pharmacopeia. It is a food-familiar aromatic seed and generally well tolerated; if you are pregnant or nursing, it is best avoided as a precaution because information is limited. Please read the notes below.
What is the difference between the tincture and alcohol-free versions?
Both are liquid extracts of the same Alpinia katsumadai seed; only the solvent differs. This tincture uses organic alcohol with vegetable glycerin and water, the classic conventional method that yields a concentrated extract with a long shelf life. The alcohol-free version is a glycerite made with vegetable glycerin and purified water instead, for those who prefer to avoid alcohol. Choose the tincture for a traditional alcohol-extracted format; choose the glycerite if you prefer no alcohol. The seed inside is identical, and the same notes apply to both.
How is Cao Dou Kou different from the other cardamoms and galangals?
The ginger family has many similar-looking, similarly named spices, so the botanical name matters. Cao Dou Kou is Alpinia katsumadai (grass cardamom). It is different from black cardamon, which is Alpinia oxyphylla (Yi Zhi Ren); from galangal, Alpinia galanga; from lesser galangal, Alpinia officinarum; from cao guo, Amomum tsaoko; from round cardamom / bai dou kou, Amomum kravanh; from true cardamom, Elettaria cardamomum; and from grains of paradise, Aframomum melegueta. All are aromatic ginger-family spices with different traditional uses. We label ours clearly as Alpinia katsumadai so it is not confused with the others.
How do I use Cao Dou Kou / Katsumada Galangal liquid extract?
Shake well first. A typical amount is 20 to 30 drops in 2 oz of water, tea, or juice, up to three times a day, or as directed by your healthcare practitioner. Because this is an alcohol tincture, adding it to water softens the taste. Store in a cool, dry place away from direct light, and shake before each use.

Cao Dou Kou is a food-familiar aromatic spice and is generally well tolerated. A few sensible cautions still apply.
