Liquorice (Glycyrrhiza glabra), the licorice plant, is a hardy perennial of the legume family, Fabaceae, native to southern Europe, the Middle East and western Asia and grown commercially in Turkey, Iran, Spain and China. It grows 1-1.5 m tall with pinnate leaves of 9-17 sticky leaflets and spikes of pale violet pea flowers. Its long, woody taproot and runners are brown outside and yellow inside, and taste intensely sweet from glycyrrhizin, up to fifty times sweeter than sugar, with the familiar flavor of licorice candy. We extract the dried root.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
