Black Garlic (Allium sativum) is ordinary garlic, a bulbous perennial of the amaryllis family, Amaryllidaceae, native to Central Asia and grown as a kitchen staple for thousands of years, that has been aged whole for several weeks at controlled warmth and humidity. The living plant has flat, strap-like leaves 30 to 60 centimeters long and a bulb of 8 to 20 cloves wrapped in papery white skin. During aging the Maillard reaction turns the cloves jet black, soft, and sticky, with a sweet, mellow, molasses-and-balsamic flavor and none of the raw bite; the method is credited to Korea and Japan. We extract the dried bulb and bulb powder.
Tincture or alcohol-free drops?
Both start from the same dried plant material and cold maceration. The tincture uses organic alcohol
as the solvent, keeps for years and is the classic herbal form. The alcohol-free drops (glycerite) use
vegetable glycerin and purified water, taste mildly sweet and suit anyone avoiding alcohol. The amount of
dried herb per serving is printed on each label.
